Easy Chickpea Salad With Honey Lemon Vinaigrette

This fresh, vibrant chickpea salad comes together in just 10 minutes with no cooking required. Canned chickpeas, sweet corn, creamy avocado, crisp cucumber, juicy cherry tomatoes, and a kick of jalapeño all tossed in a simple honey lemon vinaigrette. Perfect for meal prep, potlucks, and light weeknight dinners.

Ingredients
  

  • 2 cans Chickpeas drained, rinsed, and patted dry with a paper towel so the dressing clings properly, (15 oz / 425g each)
  • 1 cup Sweet corn drained if canned or fresh off the cob if in season, (approx 150g / 5.3 oz)
  • 1 medium English cucumber diced, no need to peel, (approx 200g / 7 oz)
  • 1 cup Cherry or grape tomatoes halved, (approx 150g / 5.3 oz)
  • 1 Jalapeno very thinly sliced, seeds removed for mild heat or kept in for a full kick
  • 1 large Avocado diced into medium chunks, added right before serving only to prevent browning

Honey Lemon Vinaigrette

  • 3 tablespoons Extra virgin olive oil good quality, (approx 45ml)
  • 3 tablespoons Fresh lemon juice about 1 large lemon, always fresh never bottled, (approx 45ml)
  • 1 teaspoon Honey raw or regular, balances the tartness of the lemon
  • 1 small Garlic clove finely grated or pressed
  • 1/2 teaspoon Dijon mustard helps the dressing emulsify and coat evenly
  • Salt and black pepper generously to taste

Optional

  • Fresh flat-leaf parsley or fresh mint small handful, roughly chopped
  • Crumbled feta cheese generous handful, adds a salty tangy layer on top
  • Red pepper flakes small pinch, for extra heat

Instructions
 

  • Make the Dressing in the Bowl: Add the olive oil, fresh lemon juice, honey, grated garlic, and Dijon mustard directly to the bottom of your largest salad bowl. Whisk together until smooth, slightly thickened, and fully emulsified. Taste before adding anything else and adjust, add more honey if too tart, more lemon if flat, and a good pinch of salt and black pepper.
  • Add the Chickpeas and Vegetables: Add the drained and dried chickpeas to the bowl first and toss them in the dressing so they start absorbing the flavor immediately. Add the sweet corn, halved cherry tomatoes, diced cucumber, and thinly sliced jalapeño. Toss everything gently together until every piece is well coated in the vinaigrette.
  • Taste and Adjust: Taste the salad before serving and adjust the seasoning. Add more lemon juice for brightness, more salt if the flavor feels muted, or a small extra drizzle of olive oil if the dressing tastes too sharp. Finish with a generous crack of fresh black pepper.
  • Add the Avocado and Serve: Add the diced avocado right before serving and fold in gently so the pieces stay intact and do not turn to mush. Scatter the fresh herbs on top, add the crumbled feta if using, and finish with a few more grinds of black pepper. Serve immediately or refrigerate without the avocado for up to 30 minutes to let the flavors deepen before serving.

Notes

Dry the Chickpeas: Always pat the rinsed chickpeas dry with a paper towel before using. Wet chickpeas repel oil-based dressing and it pools at the bottom of the bowl instead of clinging to every piece.
Dressing in the Bowl: Build the vinaigrette directly in the salad bowl you are using. It saves a dish and means the chickpeas start absorbing flavor from the very first toss.
Avocado Rule: Always add the avocado right before serving only. Cut avocado starts browning within 30 minutes and there is no reversing it once dressed.
Rest Before Serving: For the best flavor, refrigerate the dressed salad without the avocado for 30 minutes before serving. The chickpeas absorb the vinaigrette and the whole bowl tastes significantly more unified and flavorful than when freshly tossed.
Lemon Balance: If the dressing tastes too tart after whisking, add an extra half teaspoon of honey and a small pinch of salt. Both balance lemon sharpness without making the dressing sweet.
Storage: Store without the avocado, fresh herbs, and feta in an airtight container in the fridge for up to 3 to 4 days. The flavor improves over the first 24 hours as the chickpeas absorb the dressing. Add avocado, herbs, and feta fresh each time before serving. Do not freeze, the cucumber and tomatoes turn watery when thawed and the avocado goes grey and mushy.
